I love these, they are very healthy and so quick and simple to make. The beauty of this meal is that you can make each one your own. For example, I smothered my whole wheat pita with fig goat cheese, and topped off with artichoke hearts, mushrooms, tomatoes, capers and red onions. Bake in oven at 190 F for 20 minutes. I'm looking forward to making the next one, with basil pesto ricotta, and chicken.
